Consumer Acceptance and Preference for Camel Milk in Selected European and Mediterranean Countries

چکیده

In this paper, we analyse consumer acceptance, preferences and attitudes to camel milk based on a cross-country study qualitative focus groups with consumers. Outside the main consumption countries where is regular part of daily diet, many consumers buy product primarily due its promised health benefits. Furthermore, they are willing pay substantial price premium for milk. The findings from literature suggest need further research aimed at improving sensory quality milk, fermented products (such as yoghurt, kefir, etc.) cheese. addition, application flavours could be an option cover perceived salty taste Another aspect that more needs conducted optimize operating parameters standardization production procedures yoghurt in future. general, can state so far only few studies exist and, particular, European consumers, not much known about their attitudes, acceptance try or such product.
